Gingerbread Muffins
Ingredients
- 1/2 cup shortening
- 1/2 cup sugar
- 1 cup molasses
- 2 whole eggs
- 2 1/2 cup all-purpose flour sifted
- 1 tsp. salt
- 2 tsp. baking powder
- 1/2 tsp. baking soda
- 2 tsp. ginger
- 2 1/2 tsp. cinnamon
- 1 tsp. ground cloves
- 1 cup hot water
Instructions
- Preheat oven to 350 degrees. In a large mixing bowl, cream shortening with sugar. Add in molasses until fully incorporated. Beat in eggs, adding one at a time.
- Sift together flour, salt, baking powder, baking soda and spices. Add to creamed mixture alternately with hot water.
- Pour into prepared muffin tins and bake for 15-20 minutes or until toothpick comes out clean. Let cool and enjoy!
