2ripe Mexican avocadoshalved, pitted and roughly mashed
3Tbsp.red onion finely chopped
1chile serrano or jalapeƱo or to tasteminced seeding is optional
2Tbsp.cilantro leaves roughly chopped
3Tbsp.fresh squeezed lime juice
1tsp.salt more or less to taste
2Tbsp.cotija cheese
1ear of corn (steamed or grilled) - kernels cut off of cobb
1roma tomato seeded and diced
Instructions
In a medium sized serving bowl, mash the avocado with the lime juice and salt. On top, add the tomato, jalapeno, red onion, corn, cotija cheese, and cilantro. Serve and enjoy!
